Two sides of the house
Front of house
Servers, bartenders, raw bar, hosts, reservations, sommelier support and private dining service. Union Square hours, five nights a week, with the restaurant closed Sundays and Mondays.
The room is dramatic and the guests expect a lot — this is a floor for people who like the show.
Back of house
Line, garde manger, raw bar, pastry and the dedicated private dining kitchen. The menu changes daily, so cooks here learn to work from what arrived rather than from a fixed recipe book.
Culinary internships and externships are offered on an ongoing basis to extraordinary students.
